The shuizhuyu is huge and impressive: ultra-tender fish, generous Sichuan pepper and chili, nicely spicy without being overwhelmingly numbing. The tofu with beef is silky and full of flavor. The sautéed green beans are perfectly cooked, dry-fried and very savory.
